2 (10 oz) bags frozen riced cauliflower
4 cloves garlic, minced
1/4 cup olive oil
1/4 cup pine nuts
1 Tbs lemon juice
2 tsp fresh lemon thyme, chopped
1 tsp lemon zest
1/2 tsp salt
freshly cracked black pepper
Directions
- Preheat oven to 425° F. Line a rimmed baking sheet with parchment paper. Place all ingredients in large bowl; stir to combine. Spread onto baking sheet in an even layer. Bake for 30 minutes, or until slightly toasted and almost dry to the touch.
